Vitt's Recipe: Gluten-Free Elbow Pasta

Gluten-free elbow pasta in roasted red pepper sauce with vegan sausage, in a wooden bowl.

You can eat this meal as a lunch or make it for a small dinner party you are hosting for the holidays! Trust me, your guests will LOVE this one.

Prep Time: 5 mins Cook Time: 30 mins 

Total Time: 35 minutes   Yield: 3-4 bowls 

Ingredients list for gluten-free elbow pasta: avocado oil, plant-based sausage, and roasted piquillo pepper sauce.

INSTRUCTIONS

Cook up the pasta according to package instructions. While the pasta is cooking, in a medium saucepan, put the avocado oil on medium heat. Once it warms up place the sausage in the pan and sauté for 5-7 minutes, or until brown and crispy. Set aside.

Drain out the pasta and set aside as well.

For the sauce, place all ingredients into a food processor (I have a Ninja) until completely smooth. Add as much salt and pepper as you would like.

Place sausage and sauce in with the drained pasta and mix it all together on low heat. Let simmer for about 5 minutes so all ingredients immerse together.

OPTION: Once placed inside the bowl, top it off with some vegan mozzarella shreds for extra cheesy taste!
